Pecan caramel rolls

Pecan caramel rolls (use  2 ” tall  hotel panx2)

Make dough
3 cups luke warm water
3 tbsp instant yeast
16 eggs
1 cup honey
3 cups butter or margarine (salt)
15 cups all purpose flour
1 1/4 cups butter or margarine
1.5 cups brown sugar
3/4 cup honey
75 pcs halves pecan
1.5 cups butter or margarine
1.5 cups brown sugar
6 tsp Cinnamon powder
make dough: add all purpose flour + butter+ yeast in a mixer bowl with paddle. mix to combine. then add eggs one at a time until finish. add water and honey last. mix until dough fluffy. rest and cover at room temperature for about 2 hours.
make topping: a mixing bowl use paddle mix butter + brown sugar until light. add honey and mix until well combine. use a brush to apply to baking tray. then drop pecan all over.
make filling: similar to make topping
after 2 hours cut dough into 3 pieces equal. dust flour if need. gently spread a piece of dough on a clean table or big cutting board. span it into size 12×8 inches. brush filling all over and roll down then cut into 8-10 peices. arrange in baking tray. cover and let rise 1 hour.
Bake at 350 F low fan about 40 minutes.
